Final Fall Food Science Seminar Monday December 10th

Three Students to Speak
The final Fall Semester Food Science and Technology Seminar will be held on Monday December 10th at 4 PM in Room 42 of the Food Industry Complex.  The Fall program will be capped off by three speakers.  Mr. Vern Hansen will discuss Viscosity Characterization of Chemically Modified Waxy, Partially Waxy, and Wild Type Tetraploid Wheat Starch, Ms. Rachel Ruess will present on the Antimicrobial Effects of Acidic Calcium Sulfate Against Escherichia coli 0157:H7 in Apple Cider and Ms. Kelly Dawson's seminar is titled Rediscovering Streptococcus thermophilus with genotyping.

Molds and Mycotoxins Short Course

Intensive course for academic credit

Academic credit is available for the Molds and Mycotoxins Short Course. You can get 1 credit hour by registering for Independent Study. The course will run February 21-23, 2008.

This course provides a basic understanding of the molds and mycotoxins that occur in cereal and other food products and the practical methods available for their detection, identification, and quantification.

  • Learn what conditions affect the growth of molds and mycotoxin production in foods and cereal products
  • Discover how to prevent the growth of molds and improve sanitation in food processing plants
  • Obtain hands-on instruction with the proven methods for detecting and quantifying mycotoxins
  • Learn about the effects of food processing and mycotoxins
  • Interact with industry representative and obtain a first-hand view of mycotoxin analyses using new technologies and test kits
  • Learn to recognize and identify molds common in foods
  • Obtain the latest information about media and methods for detecting molds in foods

The course is taught by Dr. Bullerman, Andreia Bianchini and a team of visiting faculty.

The course will be held in Omaha at the Hilton-Qwest Center Hotel. Your registration includes lunch for two days and the workshop dinner as well as the textbook. Remember: you must register for the Independent study credit and also for the workshop itself.
