My long-term research objective is to characterize natural bioactive agents and their interactions with various types of food matrices through the integration of metabolomic and physiochemical approaches. This information is then used as a means (1.) to facilitate the development of functional foods and/or nutraceuticals and (2.) to study the health promoting and/or toxic properties of these systems at the cellular level.
